Quick Soup

I like this soup, because I like the base, which is V8, and because it has spinach - good for extra iron.

Quick Vegetable Soup
1.89 litres V8 (this is the standard size here, probably a US half-gallon)
300 g frozen chopped spinach
300 g brussel sprouts
4 cloves garlic, crushed
hot sauce to taste
pepper to taste

Boil gently until brussel sprouts break apart.

Watch when you add the hot sauce - the V8 masks the hot when you first put it in - let it mix in for a a bit - then taste it. Add more after that if necessary.

I use low-sodium V8, but that isn't really necessary. I also don't add salt, V8 is salty, even the low sodium version.

This really is tasty, and it is high in iron and other green leafy virtue that those of us with absorption problems can definitely use.

[Edit: V8 is on the illegal list, as it contains tomato paste which may contain suger - but I don't have a problem with it - you can use plain tomato juice if you can't tolerate V8]
